Guest guest Posted March 27, 2001 Report Share Posted March 27, 2001 * Exported from MasterCook * Cardamom Banana Bread Recipe By :Vegetarian Planet, Didi Emmons Serving Size : 0 Preparation Time :0:00 Categories : Vegetarian Planet Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup raisins or currants 1/3 cup dark rum or apple cider 1 cup unbleached flour 3/4 cup whole wheat flour -- (or more white flour) 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 3 ripe bananas 1/3 cup canola oil or corn oil 3/4 cup light brown sugar -- firmly packed 2 eggs 1/2 cup chopped walnuts -- lightly toasted Preheat oven to 350ºF. Grease a 9 or 10-inch loaf pan. In a small saucepan, combine the raisins or currants with the rum or cider and bring the mixture to a simmer. Turn off the heat and let the pan sit for 10 minutes. While the raisins or currants are soaking, combine in a large bowl the flours, baking powder, baking soda, salt, and cardamom. Mix well. In a smaller bowl (or in the bowl of an electric mixer), mash the banana with a fork. Add the oil and brown sugar and beat for 1 minute. Add the eggs, and beat 1 minute more. With a spoon, stir this mixture into the flour mixture until the ingredients are well combined. Stir in the walnuts, the soaked raisins or currants, and their liquid. Pour the mixture into the greased loaf pan. Bake the bread for 50 to 60 minutes, until a knife inserted in the middle comes out clean. Remove the pan from the oven, place it on a rack, and let the bread cool for 10 minutes before you remove it from the pan.
