Most of us think of it only as a sushi condiment, be we also love it in this dish. We recommend using a good-quality preservative-free wasabi powder without artificial color. Use about 2 pounds of the sweetest sweet potatoes -- the deep orange, long sweet potatoes often called yams by growers. if you sweet potatoes aren't very sweet, add some maple syrup or brown sugar to taste. Serves 4 to 6 Total time: 30 minutes In a covered pot, bring the sweet potatoes, water, and salt to a boil. Lower the heat and simmer until the sweet potatoes are very soft and easily pierced with a fork. Drain, reserving some of the cooking water. Mix the wasabi powder with about 1 1/2 tablespoons of the potato cooking water to make a paste. Combine the drained sweet potatoes, wasabi paste, and butter and mash well. Add a little more of the cooking water, if needed. Add salt and maple syrup or brown sugar to taste. Variation: Replace the sweet potatoes with a buttery white potato, such as Yukon Gold or Yellow Finn. I think it needs some tweeking though.. maybe i used too much maple- but I think next time I will try adding miso and wasabi!! it was yummy though Thanks Ellen for posting it Ellen C.
