Certainly in South India there sems to be a very low incidence of arthritis... Perhaps Harshaji can find someone like you to write it. Respectfully, however, generally, the Indian diet is not considered optimal by health experts. Many Indians, unfortunately, die of heart attacks at an early age. Swami Yogananda died of a heart attack. He ate too much and was a bit on the chubby side. Many well fed Swamis have similar risk factors but not the skinny swamis. Of course, for a saint of the caliber of Sri Ramana dietary issues are not important. There are different variations of the yogic sattvic diet. An article on that would be nice as well.
