I think that as one progresses on the spiritual path the practice of Ahimsa becomes impossible to ignore. As well you will find that you simply feel better eating this way. While it might be a bit difficult at time to maintain it eating cafeteria style, it is not impossible. Seeing a nutritionist (someone with a B,Sc. Or Masters degree in nutrition) is a great idea. She can assess your intake to make sure that you are obtaining the necessary nutrients, suggest supplements where necessary and even give you practical tips on how to maintain your diet at school. She can also recommend literature on the topic. Some schools provide nutritional counselling through student health services. I was nutritionist years ago and while my knowledge is a bit rusty now, I do remember that having citrus fruit or juice with meals enhances the absorption of iron.
