In the spiritual context, the reference is mostly on "Love - the subtle reference to heart." When we say someone is 'heartless,' we imply that person is without compassion and love! In Gita the context is to distinguish the 'special devotee' who expresses the True Love toward the Lord. In Ramayana, the greatest devotee, Hanumanji always kept 'Lord Rama' inside heart. In one of the episodes, Hanumanji demonstrates to a doubter by opening his chest to show the presence of Rama inside. Though the entire episode is symbolical to emphasize that the Divinity always rests in the "Heart." It is quite logical for us to link the physical heart as a symbol of 'our true love of God.' At the same time, I agree with Gregji that in different cultures, the symbolism differ.
