It would seem that sattvic food is easy and natural to stick to in India; but getting much more complicated elsewhere. Being an outcome of simplicity of life, people only using food for survival rather than enjoyment, and an unpolluted environment. Some sources say for example that eating in a hurry is considered tamasic, as well as over-eating. We live in a society that worries about weevils in rice from a health point of view, rather than the desire of weevils and other animals not to be eaten. Yet think nothing of so-called vegetarian foods being cooked in vessels used to cook nisheda (forbidden) food, or oil so used. The injunctions that sattvic food must be 'cooked only by a person of very holy disposition who lives a very pious life',('this is the most important quality for sadhakas, since the transformation of food through fire makes subtle sanskaras adhere to it') might be injudicious to insist on in, say, a McDonald's takeaway. In this way the mind doesn't get tangled up around "yes" and "no" right and wrong, but a deeper presence is acknowledged and consulted. This can be done with any question.
