Personally, I have no great trouble with the 'sattvic', but quite a lot with the 'moderation'! I think seekers should have a sensible attitude to diet, as to money. A balance between obsession and utter disregard. In the west, generations of parents have believed and taught their children that flesh foods are essential to survival; complete eradication of this idea is nine-tenths of the problem most have in adopting a vegetarian diet. If they were assured by kindergarten teachers and parents that the latter is perfectly safe, most of the so-called craving would vanish. Even dedicated vegetarians suffer from notions that protein in abundance is vital, or that they must take handfulls of vitamin tablets (especially when in India). I was a late starter (at about 30)after eating many flesh foods including rabbits. And still eat dairy products (except eggs). I can recommend self-imposed poverty as excellant for dietary health; a miser who spends all his cash on say gold coins, and neglects clothes, travel, luxuries and occasional food treats, (I'm a little like that!) is likely to enjoy good physical health, and also to acquire spiritual insight as a result of such deprivations, notwithstnding entirely good motives.
