Non Vegetarian Dishes

While mutton, chicken and fish are served throughout the country, the frequency

with which they are prepared differs. Fish is more popular in the coastal areas

while chicken and mutton are consumed in the mainland. Religion plays and

important role in the consumption of non vegetarian food. Beef though available

is avoided in general by Hindus and Pork is not consumed by Muslims. Mutton is

the chief attraction in the 24-course banquet, in Kashmir. Each dish in the

banquet is cooked in a different way. Of all the coastal states in the country,

Goa, Kerala and Bengal have culinary traditions specializing in rice and fish.

Goan seafood delights include crab, lobsters, tiger prawns and shellfish,

accompanied by rice. Chicken is more popular in the Northern states of Punjab,

Delhi and Haryana.
