Being a vegetarian (very little dairy ad eggs) how can I make sure that I am getting proper nutrition? I take a multivitamin, ginkgo, calcium and vitamin C. Thanks. Soy products are also a great source of protein. I am not a nutritionist in any way - I work in a health food store. Hope this helps... In fact, Kale is an extremely high source of iron, which you will need, being a vegetarian. A book that I have found rather useful for determining nutritional values for a vegetarian and vegan diet is "The American Vegetarian Cookbook" ... it has pages full of info on what vitamins and minerals are in what and actually explains a lot of the myths of protein and dairy products and why we have been led to believe that they are "good" for us. here is a link for it if you want to see what it looks like.. read reviews http://www.amazon.com/exec/obidos/ASIN/0446515612/qid=972916224/sr=1-18/102- 8215557-3997767 just click on it to see it. This is a very basic book....... but it is really thorough for standard vegetarian diets and for food combining. Complete protein is an issue for us veggie types (rather than sufficient protein, which really isn't a big deal). Make sure you get grains and legumes every day - together they provide a complete protein source. Soy is a particularly good protein source, as are nuts and seeds. Variety in your diet is important - there are certain things that are more difficult to get as a veggie eater (particularly with little dairy), although if you are getting whole grains, legumes, nuts & seeds for the protein, you'll also pick up a fair amount of these: Vitamin B-12 and D, calcium, zinc, iron. > I take a multivitamin, ginkgo, calcium and vitamin C. Variety is important, and the suggestions for complete proteins from other responses are key for a vegan. Here is some basic additional info from a couple of sources. "Potatoes, being rich in Vitamin C, have been used in Ayurveda as a cure for scurvy for centuries. They are also recommended as an easy to digest starch for those with nervous indigestion or indigestion related to liver weakness." I have been taking a product for two years that I believe to be extremely beneficial in supplementing what I am able to eat. This product has in it the OPTIMAL AMOUNTS of vitamins and minerals so that your body can take what it needs and keep working at an optimal level. I agree that B vitamins are essential for any vegetarian, especially when we are working with the central nervous system, as in kundalini yoga. I would invite you to explore the products that supply the correct ratio of essential nutrients that the human body needs to function well. It prevents excess fatique for me. Also you can take Vit B complex and sublingual Vit B12, but I find I need the iron too. Actually I take all 3. Also you need a good mineral supplement everyday too.
