We have been using mung beans & rice as a "complete" meal on a daily basis for sometime now and really find that we can't do without it but we would love to know if anyone on the list knows of any other "complete" meals that they can recommend. Any beans and rice combo is complete, especially if you add some green and yellow veggies. My fave is an old cherokee dish I grew up on that I call "the three sisters dish". Black beans, corn or hominy, and squash...summer or winter as the case may be. Corn, beans and squash are considered sacred and make a sacred combination-not to mention a wholesome, complete meal.
