Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 To help diminish any confusion on the subject of honey, I did a little research and found the following passage in the Ayurvedic Cookbook by Amadea Morningstar and Urmilla Desai. These authors are grounded in the field of Ayurvedic Medicine and have a solid understanding of how certain foods affect the body. They wrote: "...being a volatile sweet in the presence of heat, [honey] can break down when used externally. For this reason, it is best to use honey cool or at room temperature. Left in hot places it will ferment, and used in baking it can create ama.* If you are adding honey to a hot dish or beverage, it can be added at the end of preparation immediately before serving. In India it is said that the effects of honey change over time, and that young honey- less than six months old- is healing for Pitta.*...Otherwise, honey is best consumed by Kapha.* Vatas* benefit from the occasional use of this sweet, as it is warm. Its dryness can aggravate Vata if over-used." * Ama is defined as "the waste that accumulates inthe body, primarily through poor digestion and absorption." *Pitta refers to individuals whose constitution is dominated by the elements fire and water *Kapha...........earth and water *Vata.............air and space (or ether) (Once again, I do not have detailed information with respect to diabetes and hypoglycemia.
