I've had Om Shanti explained to me before, but I can't recall the exact def. although intuitively, I'd say it means something like "All peace" or "May there be Peace"... And you had asked about Darshan as well... Again I don't have a book read def. but I'd say it's like "being in the presence of the light" I've heard Darshan used in reference to "being in the presence of an enlightened one" and the effect that has on the individual. These are my right brained, 100 words or less definitions!! Maybe someone out there could be more clear for us?
