I have not made this myself but remembered seeing it in my 'millet diet' cookbook, sorry, I don't have 'Taste of India" and don't know what "panir" is.... Love & Peace, Devinderjit aka Peggy Sue Millet Pizza - from The Siri Singh Sahib's 'Weight-loss Millet Diet' by Bibiji Inderjit Kaur Crust: 2 cups cooked millet matzo meal as needed 1 t salt Filling: 1 handful broccoli, no stems, chopped fine 1 clove garlic 1/2 red pepper, diced fine 1 T onion grated 3 shitake mushrooms, sliced... or 3 regular mushrooms, sliced 1/4 lb tofu, in chunks Bragg's to taste No-oil spaghetti sause 1/4 cup panir - See "Taste of India" by Bibiji* 1 T ginger, peeled & grated Crust: Knead millet with enough matzo meal and salt to make stiff, pizza-like dough. Press in 8" pie pan. Cook in 350 oven until firm (about 15 min) Parboil broccoli, garlic, pepper and ginger for about 5 min. Drain and set aside. In frying pan saute all vegetables with shitake mushrooms, a little water & Braggs to taste, about 5 min. Spread the bottom of the pie crust with no-oil spaghetti sause. put vegetable mix on top. Sprinkle with crumbled panir.* Bake in 350 oven for about 15 minutes. To serve, sprinkle with dried basil, garlic powder and red chili flakes to taste.
