Almonds increase ojas, thus almond milk is very nourishing and is good for all constitutions. To eat almonds, soak them, as soaking raw nuts and seeds activates them, turns off the enzyme inhibitors, thus making them easier to digest. Almonds are saatvic, energizing, and balancing. The almond tree belongs to the same family of plants as the rose, the plum, and the peach. The ayurvedic way to make almond milk is to blanch the almond and then soak them overnight before blending them. The skins are thought to be too astringent and can aggravate Pitta. Sesame milk is also nourishing and can be made in the same fashion, as can any other type of seed or nut milk. Almond Milk 1 Cup Blanched, Soaked almonds 4-6 Cups Water Combine almonds and water. Place in a blender and process until all of the almonds are ground. Drink as is or filter using cheesecloth or a clean piece of cloth (T-shirt cotton works well) before drinking. Use the almond pulp to make nut loaves or patties or to add to baked goods. Agave nectar, maple syrup or a few soaked dates may be added (not for Kapha!) before blending for sweetness. Some enjoy honey and use it as well. I like to add warming spices (ginger, nutmeg, cinnamon, cardamom and even curry spices at times) to my almond milks, depending on the intended use and consumer of the milk. I am working on a cookbook that combines the sciences of Ayurveda and blends that wisdom with Traditional properties (they are very similar and compatible in many ways). Blessings and Be Well! But I don't think you'll save much money compared with buying a box of 12 cartons of almond milk at a time... You can buy almond milk in health food stores or in big food store that have a health food dept.. If you choose to make it yourself, you'll need a cheese cloth or fine strainer for straining. One recipee is this: 1 cup raw almonds 3 cups water 1 TBS honey (or some other sugar substitute if you're vegan) Soak almonds at room temperature for 1-2 days. Change water every day. If you can't make it right then, put in refrigerator (in water) for up to a 5-6 days until you are ready. Keep changing water daily. Use clean water, tap water usually has chlorine and fluoride and may cause lots of health problems. When ready to make the milk, drain container. Add 3 cups of clean water and the almonds to a blender. Blend with the sweetener until smooth. Strain through a cheese cloth or fine strainer. Enjoy! Awtar S. It is called Almond Breeze by Blue Diamond, a growers' cooperative. I buy it in health food stores and in some grocery stores. As far as making it yourself, there is not much more to it than putting almonds and water together in a blender. Study the label in a commercial product and duplicate. You can maybe come up with something with a little more "body" to it, so it will be more like Soy milk. That would be good. At any rate Almond milk is the more potent food, Ayurvedically speaking.
