I do not recall reading how the ghee was to be stored. Is it left out at room temperature or refrigerated? How long does ghee keep? Any information would be helpful. Guest guest Posted April 10, 2006 Report Share Posted April 10, 2006 Sadhana Seva ji, I have left mine unrefrigerated for two weeks without noticing any "ripe" odor but I try to refrigerate what I can't use within a week. If I have a very large amount I will even freeze it despite being told that freezing increases the Vata characteristics of food. I would like to understand how it is that ghee is said to not need refrigeration. We hear about Vitamin E being added to oils to keep them fresher longer. I wonder if there is some aspect of ghee (clarified butter) that has some anti-oxidant qualities that would prevent/retard rancidity.
