But I was taught in general that, when breaking a fast, one should break with prasaadam that has no grains or beans (i.e. Ekaadashi prasaadam). But my understanding is that the pastime of holi is originally something played by Krishna and the gopikas, so for that reason we don't usually do it. Of course, many people in North India may wish to do it since it's part of their culture. The question then arises, is it somehow inappropriate to do it (because it would amount to imitating the pastimes of Krishna)? I don't know the answer to this question.
