Srila Prabhupada ate peanuts on Ekadasi. In most cases, Prabhupada only

mentions fasting from grains on Ekadasi. Sometimes he'll add dahl or beans.

How you define "grains" or "beans" is still important. Some people eat

buckwheat or quinoa on Ekadasi although those might be considered grains. On

the other hand some won't eat corn oil or corn syrup although those are

clearly not cereal foods.

peanuts

and lettuce on Ekadasi's."

That is because although the 'karmis' consider peanuts to be a legume

vedically they are not hence we eat them on Ekadasi.
