We seperate the cream from about half of our milk The machine is hand operated and depending on the speed at which it turns the cream is thicker or thinner. At 60 rpm the cream is about 10% of the milk. We make butter and then ghee from the cream. After seperating the cream,the milk of course is much thinner, but it can have banana or mango added to make a milk shake or it makes nice yogurt and then can be strained to make srikhand, or made into sweetrice with a good amount of date gaur which helps to thicken it. The curd from skimmed milk is very rubbery and not much use for milk sweets or subjis. I have heard that partially skimmed milk is better for young children to drink. We warm the milk first before seperating as it seems to help the process. Personally I drink full cream cold milk unboiled every morning without fail, and have done so for 25 years despite dire warnings from numerous people. I prefer the taste and find it easier to digest. We have our own cows and keep the milk in a fridge, boiling it after breakfast, and again in the evening if there has not been much electricity during the day or the fridge is on the blink. Our seperator will work with as little as 1 litre or it can theoretically seperate 50-60 litres an hour, but I have never needed to do more than 15 litres at a time. It needs an oil change every now and then, is robust, and gives steady reliable service. The rubber sealers wear out every 5 or 6 years, but otherwise nothing needs replacing. My father has been giving only homoeo medicines for all the cows/calves. Currently he has not been breeding selectively, but I have insisted that he does. I will also take the advice on seperating calves over 1.5 years. Putting the bulls to use, is what he has to know more about. for ploughing, it involves substantial training.
