This style of expression is often used in them to make a strong point. Eg. one who takes grains on Ekadasi becomes the murderer of guru, brahmanas, cows, etc. Imagine if you committed such massacre, what would the reaction be like? The underlying principle, I believe, is that many of these foodstuffs have ingredients which are not conducive for mental and bodily balance, and are thus not recommended for the beginning devotee. For example, eggplant contains toxic solanaceous alcaloids, and there are documented cases of eggplant poisoning. Carrots are known to stimulate the mode of passion, and are thus not recommended (especially for the brahmacaris). Onions and garlic we all know. Some of the milk products mentioned therein originate from animals of lower modes of nature, like goats and buffaloes, and are thus not recommended, as one should offer sattvic foods to the Lord.
