I remmember one logical explanation. Nandotsava means the Festival of Nanda

Maharaja, so the feast next day is logical, and not previous day. We offer

the bhoga to Krishna and glorify the appearance. Same for Gaura Purnima next

day is Feast of Jagannatha Misra, so therefore it is logical to take a feast

on this day and not the day before. Actually we follow the mood and so we

partake of Nanda Maharaja's feast.
