Well, besides the over accumulation of ferritin from the excess iron in

meat, there are actually 2 different kinds of saturated fats - short

chain, easily digestible like ghee, and long chain, less digestible as

found in meats. Aha!>>

 

 

The good thing about ghee, in addition to the different kinds of

saturated fats, is that it has "protective lipids" like MCTs and probably

DHA and GLA. (Waiting for analysis).

 

It would be more scientifically precise to refer to "heme" iron,

rather than ferritin, which usually refers to serum bound iron- in blood-

NOT dietary sources, although a new supplement has appeared in healthfood

stores, lately. Sadly, I just saw information that purports to say that

animal sources of iron-heme-does NOT elevate blood serum iron like iron

vegetarian/supplemental sources, like white flour and many breakfast

cereals. (This makes some sense if you think about it: Some animals and

people, like Eskimoes, rely on a practically total flesh diet and if all of

that iron was utilized then there would be really serious problems.

However, that is not the case, as for example, the low incidence of CVD

amongst the Eskimoes woulds indicate.
