Guest guest Posted January 20, 1999 Report Share Posted January 20, 1999 As I have been researching ghee, I have been just vaguely troubled by one thing. by showing saturated fat is not the villan once thought, am I also establishing some defense for meat eating? Well, besides the over accumulation of ferritin from the excess iron in meat, there are actually 2 different kinds of saturated fats - short chain, easily digestible like ghee, and long chain, less digestible as found in meats. Aha! Will attempt to find the source material collaborating that statement. Moreover, if you check http://www.nal.usda.gov/fnic/cgi-bin/nut_search.pl and search on butter oil. you see that ghee is 63% saturated lipids, 29% monounsaturated and 4 % polyunsaturated.
