I wanted to share a very delightful vegetable prepration that Lalita Madhava (11yrs) prepared for yesterday's lunch for our Sri Sri Gour Nitai. She likes to experiment with new recipes, and everything she makes is very good. ~* Okra, Zucchini, Red Pepper, Cauliflower Subji*~ *sliced okra pods toasted in butter with paprika and ground coriander (we use Yamuna's recipe for dry roasting fresh coriander seeds and grind them) (about 20 okra) *sliced zucchini (2 medium sized) *chopped red pepper (or green pepper, although red is sweeter) (1 medium sized) *fresh blended tomatoes with fresh basil & salt ( about 4 or 5) *cauliflower chopped in small flowerettes. (1/2 a cauliflower) Melt 1/4 stick of butter, add 1 T. ground coriander, 1 t. paprika. Add circle okras and cook a little. Add zucchini's, red pepper, cook a bit, then add blended tomatoes so the okra doesn't get gooey. (okra will always get sticky unless you add tomatoes with it , unless it is fried in ghee) Add cauliflower and cook for 20 minutes until all vegetables are cooked. Add 1/4 cup of sour cream, salt. Offer to Sri Sri Gour - Nitai. We also cooked some simple pearl barley in water and served the vegetable beside a dish of hot, buttery soft barley. This preparation was so delicious, it could very well have won a prize in a cooking contest~!
