It is also the border temperature for being allowed to label it as cold processed honey in many countries. Honey contains proteins and sensitive enzymes. If heated the enzymes are rendered inactive and the proteins are reported to break up into partially toxic side products. Not life threatening but still better to be avoided if possible.
