Eggplant on ekadasi?

I was very surprised to see texts in the Cooking seminar conf. that gave a

few eggplant recipes for cooking on Ekadasi.

 

South Indian brahmins and vaisnavas, as far as I know, avoid eggplant,

radish, drumstick etc. on ekadasi, dvadasi and other auspicious days. Is it

an ISKCON system to take eggplant on Ekadasi? Eggplant is considered one

among the vegetables created by Viswamitra in his mood of challenge to

Brhamarishi Vasista and some people avoid cooking those vegetables on

auspicous days.

 

Can someone please clarify?
