It's true that in parts of India certain vegetables are not taken on Ekadasi. However, the standard Srila Prabhupada laid out was a simple one -- no grains or beans. If it's not a grain or a bean, then according to Prabhupada it's OK to eat it on ekadasi. If you want to take on extra austerities as part of your ekadasi vrata, you might choose to add other foods to the list -- or to fast entirely -- but the simple standard given by Srila Prabhupada is ISKCON's basic practice.
