Here are a few 'good devotee' recipes for quick & easy salad dressings: Our favorite is a plain tahini dressing: Keep a separate glass jar & lid just for dressings: **Lalita's quick Tahini dressing** 1/2 cup plain yogurt 1 Tablespoon of Sesame Tahini- (found in Health Food Stores) dash of hing sprinkle of salt & pepper Add all ingredients and shake well. Add more tahini for a thicker dressing. Presto-- it's ready to offer. Lalita is 7 and she does a good job on this one. **Italian dressing** 1/2 cup of extra virgin olive oil juice of 2 fresh lemons 1/8 teaspoon of basil & oregano dash of hing, salt & pepper shake it up and its ready to offer. Here's a nice fancy dressing but you need a blender for this one. 1 ripe avocado 1/3 cup nuts (walnuts are best) juice from 2 fresh lemons 1 tsp. paprika 1/8 t. hing 1 t. salt add 1/2 cup extra virgin olive oil as the last ingredient while blender is on. The following recipe is a nice one from our friend, Mantrini devi dasi in Dekalb, IL, which she gave me years ago: **Green Goddess Dressing** 1 cup sour cream 1/2 cup lemon juice 1 bunch parsley (washed and stemmed) 2 tsp. salt 1/2 t. pepper 1/8 t. hing (optional) 1 T. honey or sugar Blend above ingredients. **while blending**--add 1/2 cup sunflower or olive oil slowly in a thin stream. (this will make the mixture thicken) Add some buttermilk if its too thick. These home-made dressings with fresh ingredients are much tastier than the ordinary store bought stuff. It's not easy for devotees who work full-time or go to school to make their own prasadam, but these dressings are quick and easy once you try them a few times. Hope all is well for you.
