Beer is made from the starch/sugar part of the grain and the left over is brewers yeast, hence the name. Yeast used in bread making is a fermenting agent that causes the bread to rise. It creates a byproduct (gas.) When the flour is kneeded the gluten in the grain becomes fiberous and catches the gas in pockets which cause the bread to rise. You have to be careful to find out the medium that the yeast is grown on. Some yeast companies grow it on an animal base and some grow it on a grain base. In the USA the brand RED STAR is believed to be grown on the grain base.
