During the preparation of brown chocolate the cacao beans have to be fried, like cofee beans. This frying process gives the brown chocolate its distinct, slightly bitter taste. This is also what makes it brown. White chocolate only contains cocoa butter, which is derived from the cacao. This explains the difference in taste: no frying here. But it is still a habit-forming intoxicating substance because of the presence of cacao.
