Guest guest Posted August 8, 2000 Report Share Posted August 8, 2000 ~*~*EKADASI CAKE*~*~ 3 cups whole milk powdered milk 2 cups shredded coconut (the fine kind is nice, as found in Indian stores) 1 cup granulated white sugar or Florida Crystals (less sugar can be used, as it is a very sweet cake) 1 teaspoon ground cinnamon 1 t. ground allspice 1 t. cardomon powder (optional) 1 t. baking powder 1/2 cup melted butter 3/4 cup water (more or less) Preheat oven to 350 degrees. Mix all ingredients to make a thick batter. Pour into well buttered baking dish and bake for 25 minutes, until cake is golden brown. This cake tends to really bubble up when cooking and may spill over the edge, so put it in a very deep dish.
