PEA PUREE

 

This is a great side dish. You can also serve it as a unique dip for heated

pitas.

 

1/2 pound yellow split peas, dried

1 teaspoon whole cumin seeds

1 teaspoon turmeric

1/2 teaspoon ground cinnamon

1/2 teaspoon chili powder

6 whole cloves

1/2 teaspoon grated nutmeg

2 teaspoons soy sauce

 

Wash the peas well and be sure to discard any discolored ones. Place

them in a large saucepan with enough water to cover the peas plus an

extra inch. Bring to a boil. Reduce the heat and simmer until the peas

have completely softened. Monitor the water and add more if necessary.

 

In a pan, heat (for about 3 minutes) the soy sauce and spices,

stirring often.

 

When the peas are ready, drain them and add them to the soy mixture.

 

Mash the mixture until it becomes thick and creamy.

 

Serve.
