If you keep the cows very clean it might be ok to not boil or pasteurize

milk. If strict hygienic circumstances cant be guaranteed milk should be

boiled or at least pasteurized.

 

SP. said milks means hot and slightly sweetened. It is easier to digest when

it is hot since the cold milk fat is difficult to emulsify. The heating is

not a problem as much as the homogenization is.

This is partially true but not relevant for humans. Non of the animals is

supposed to eat anything cooked. So why should they tolerate boiled milk as

well, as humans do who boil most of their food. If you eat grass the whole

day it might not be healthy for you but its more than fine for the cow.

 

Another factor is the freshness of the milk. Bacteria counts are doubling

every half an hour in un boiled milk. If you drink the milk strait from the

(clean and healthy) cow it might be fine but if you have to wait a few days

until you get the milk, it might contain enough bacteria already to make you

sick.

 

In Austria we just had a few cases of borrelioses which was transmitted by

un boiled goat milk. Not a very pleasant disease by the way.
