Guest guest Posted June 7, 2006 Report Share Posted June 7, 2006 Dear List, Esteemed members from the group have already contributed on the subject of ghee and butter, however I would like to add my views with an ayurvedic mind .As far as I know there is no study conducted in the world based on the body constitution (prakruti) and its reaction towards different food articles. This, however, is the fundamental principle of Ayurveda. While everybody is talking about cholesterol, saturated fats etc., I feel we are ignoring the vital aspect of the ayurvedic properties of ghee. Ayurvedically it is very important to know how the ghee is prepared. Most of the times we do not get ghee, which is prepared by the traditional method. I think all the studies were conducted with machine made ghee. This makes all the difference. Unnatural methods of preparation always result in unnatural actions on the body. As we know ghee is the best satmya food for pitta persons and the best Anupana for pitta diseases. Similarly Tila taila(Sesame oil) for vata and Madhu(Honey) for Kapha “Ghritena vardhate bhuddim”,.....Ghee improves intellect and memory, According to Acharya Charaka “Ghritam pittanilaharam rasashukroujasaam hitam Nirvapanam mrudukaram swara vrnaprasadanam” - Charaka sutrastana 13th chapter Ghritapana arha (Indications of Ghee in take as such) “Vata pittaprakrutayo vata pitta vikarinah Chakshushkama kshatah ksheenah Vrudhha baalaabalah Ayuhprkarha kamascha balavarna swaradhinah Pustikamah prjakamah soukumaryardinascha Deeptyoujas smruti medhagni budheendriya balardhinah Pibeyusarpirartascha daha shastra vishagnibhihi…” Ghee as snehapana(drinking ghee ) is indicated in persons of vata pitta constitutions. Persons who are suffering from vata pitta diseases. Emaciation , old age problems, problems of the youth as well as female diseases benefit from ghee. And one who is willing to have perfect vision, great intelligence, memory, longevity, strength of the sensory organs, strength of the body, Resistance, good appetite and digestive power, complexion and great glow of the skin, healthy offspring and finally great power of Ojas i.e. immunity need ghee. In view of the above, it is futile to harp on the negative aspects of ghee. I would request the members to think before relying completely on modern research studies on any of the issue related with Ayurveda. Please consider our ancient great scholars like Charka, Sushruta, and Vaghbhata. They have done continuous research on every point of health, which they have documented in the form of Sutras in the divine and scientific language of Sanskrit. Our duty is to interpret them properly to suit present language of understanding. Technical terms only confuse the patient and adds to the ego of the physician. They do not contribute to the intention of making Ayurveda popular. Ayurvedic concepts were a part of the household in ancient India. This was achieved by making the knowledge available in simple, easy to understand, practical everyday terms and not by taking recourse to high sounding words understood only by the doctors. I hope I have made myself clear. Let us first study what the sages have said and apply the knowledge. Let us document the various practices that have stood the test of time and survived for centuries. Let us also revert back to the natural method of preparation of food and medicines. Only if this effort fails should we seek to research further in the spirit of a true Vaidyas to add or modify the available knowledge. WE need to understand first how Ghee is prepared by Ayurvedic method. If we consider that ghee , then the results are much different. What studies & references which we are refering are on Ghee ( Clarified butter) prepared with modern dairy technology & not ancient way. Ancient Ghee is termed as Navaneetakam ie the one which gets generated from Navaneet ie Butter .The entire process can be summerised as below - Milk ( Cow's) ----> Bil ----> collect cream ---> curdle it with curd ---> curd----> churn itwith appropriate volume of water to get ----> Buttermilk ----> collect butter which gets accumulated on the top of buttermilk ,collect it ----> keep it for heating on low flame till there is a typical characheristic fragnance of ghee , boiling of this liquid starts with golden coloured ghee ----> collect this clear golden coloured liguid ie Ghee -supernatent fluid ----> downwards you get solidified part which is NOT to be used.
