I never use canola (rapeseed) oil. It is so very genetically modified (unless it is organic) and it is an unhealthy choice in my opinion for many other reasons. An even healthier way to use your oils is to steam, chow or stir fry in water or vegetable broth and then add the oil to the dish after it has been cooked. Cooking oils denatures them and turns them in to an undesirable product. Many people will tell you to use ghee, however, personally, as a person who follows a vegan diet and lives by Ahimsa as much as I can, I do not use any animal products. Guest guest Posted June 29, 2006 Report Share Posted June 29, 2006 Sat Nam Any heating of oil changes the nature of the oil so I am not sure any oil is that beneficial when heated. Some say peanut oil but who knows. If the nature of oil changes any time we heat it, who knows if it is safe. I have taught and been taught that oil should be put on food cold(after the food is cooked). We do need healthy fats in our diets but cold is best. Even when we roast nuts the nature of the benefits change. Raw nuts best. Keep researching. I do. Most cultures cook with oils and I haven't seen anyone drop dead at the stove but arteries do get clogged by saturated oils and heating usually causes more saturation. In a book "The Okinawa Study", there is some interesting scientific information about the use of Canola Oil. The book looks into why Okinawans have lived in general--close to 15 years--longer than the West, and many more years on average than any other society. Hope this helps.
