This is recipe #9 – Maa’s Spicy Potatoes

 

For 6 servings

 

4 medium large potatoes

2 tablespoons olive oil or ghee

¼ teaspoon Garam masala

1 pinch hing (asafetida)

¼ teaspoon salt

Pinch of red chili powder (cayenne), or dried red chili flakes

 

Peel potatoes and cut into one-inch cubes. Place in a saucepan with water to cover, bring to a boil, and simmer until tender. Drain off the cooking water.

 

Heat the olive oil or ghee over medium heat in a large, non-stick skillet. Sprinkle in the salt and hing. Fry the potatoes until lightly golden brown. Sprinkle in the Garam masala and cayenne. Turn the heat to low and cook two minutes longer.
