Guest guest Posted September 8, 2006 Report Share Posted September 8, 2006 This is recipe #9 – Maa’s Spicy Potatoes For 6 servings 4 medium large potatoes 2 tablespoons olive oil or ghee ¼ teaspoon Garam masala 1 pinch hing (asafetida) ¼ teaspoon salt Pinch of red chili powder (cayenne), or dried red chili flakes Peel potatoes and cut into one-inch cubes. Place in a saucepan with water to cover, bring to a boil, and simmer until tender. Drain off the cooking water. Heat the olive oil or ghee over medium heat in a large, non-stick skillet. Sprinkle in the salt and hing. Fry the potatoes until lightly golden brown. Sprinkle in the Garam masala and cayenne.
