Ghee is a rich, nutty tasting clarified butter used in Indian cooking. It may be purchased ready-made in Asian or Indian Markets. To prepare it at home, melt a pound of unsalted (sweet) butter in a small heavy saucepan over very low heat until all the water is dissipated. Continue cooking over very low heat until the milk solids have turned almond brown and cling to the sides or have fallen to the bottom of the pan (10 to 20 minutes depending on the amount of water the butter contains). Line a strainer with several layers of paper towels and pour the golden mixture through to remove the milk solids. Cool and store in a clean jar at room temperature or in the refrigerator.
