Guest guest
This is from the Glossary of Ingredients Garam masala is a mixture of ground aromatic spices used as a seasoning in Indian foods. There are hundreds of variations, but the basic ingredients are black pepper, coriander, cumin seeds, cloves and cinnamon. It is not a curry powder, and blends may vary, but they are never “hot.” Many cooks choose to add some of this, homemade or purchased, to curried dishes, even those containing curry powder or paste, because the more highly aromatic spices contained are generally not present in packaged curry blends. from Shree Maa’s Favorite Recipes, page 19 (Please note: This book does not have page numbers, but numbers can be added starting with “In Shree Maa’s Kitchen” as page 1.)
