How do I know that? Because Ayurveda says so. The karmi scientist may have their version, but I think as devotees it behooves us to uphold the Vedic version. Besides, as I said before, modern science is largely clueless about what is fit for human consumption. The same science will tell you that you need meat for a balanced diet and that butter and milk is bad for you, when in fact the exact opposite is true. Soybeans and hence also the oil are absolutely useless and even harmful for human consumption, especially if taken on a regular basis. Soy is totally in the mode of ignorance. This is especially true of modern soy products that are without almost no exception all made from gene-manipulated soy beans. Make a search on the net and read all the horror stories from people who went vegan and thought soy was the healthy alternative. Now, I am not a fanatic, or even a health freak, I enjoy Chinese noodles with tofu very much, but that's in my own home. On a public forum for devotees, we have to uphold the Vedic version. Finally I would just like to say to Yadu-srestha, that I find his suggestion, or understanding rather, that oil be used in stead of ghee at our restaurants a bad choice, very bad for preaching in fact, as it deprives people of the ultimate, superior taste sensation of prasadam cooked in ghee, which is after all one of the things that initially attracted all of us so much to Krishna Consciousness. I still remember my first visit to the temple, when the taste buds exploded in a delight out of this world, as the prasadam cooked in ghee entered into my mouth. It can never be an economical issue, because if a restaurant can cook prasadam like they did in the early days in ISKCON, the costumers will line up all the way out on the street to get it.
