I wasn't condoning this but simply replying to the question of what is actually going on in the field. In the Australian Temples the general practise is to use ghee for the deity and devotee prasadam and use some sort of oil in the restaurants. Cost would be the main factor but the other factors would be trying to satisfy the vegan customers and the widespread belief amongst the karmis that dairy is unhealthy . Just yesterday in a holistic health journal I was reading that men who drink 2 glasses of milk a day have 2.3 times the chance of contracting Parkinson's disease.
