But this is an unfortunate situation. When I cooked at Gopals in Melbourne from 1980 to 1990 we only cooked in ghee and we had queues of people down the stairs. This new idea of cooking in oil is disgusting and I for one will never support it. It is false economy. If we cook in ghee our customer base will increase because the taste is magnificent. Prabhpada told us to do so in his famous letters on restaurants. Why deviate? To hell with the karmis and their nonsense beliefs about dairy and their speculations. And as far as vegans, why should we totally bow to their respectable but somewhat excessive ideals. I know many frequent our restaurants, so we can have a few preps without dairy for them. But the bulk of dishes that need some sort of oil should contain ghee. I am convinced of this, but Australian management in some places thinks otherwise. I am in Melbourne temple as I write, enjoying prasadam cooked in ghee. Nectar!
