Dear Jami Blakeley(Aravind),

I would prefer chanting

OM AIM HREEM SHREEM SRI MATHRE NAMAHA

Though some texts put an extra Om before the first nama of Lalitha sahasranama out of ignorance(some say that an extra om makes it more powerful!...That is funny that put more Oms and make it more powerful,I would say!....There is no end to human greed and foolishness(even when it comes to a simple mantra)...)

OM is put in the beginning of any mantra to make it "shanta"

Shanteekarana ithi uchaythe omkaraha!

Sadashiva ithi uchyathe sricakrakaraka!

This is the muni vaak on this matter.

One OM would suffice I guess! However if your gurunatha has asked you to add an extra Om follow that. Sarvam Gurum!
