Cheese also can be made with out animal rennet. Adiyen's understanding is --Yogurt ( " dhadhi " ) is fermented but completely approved by our Shastras and is not categorized under tamasic aahaaram. Cheese undergoes a similar bacterial fermentation (but is a dry version intended for longer shelf-life), the Indian version being Panneer. Industrialization and the need for mass production drove firms to use rennet from calves. Many food manufacturers and restaurant chains (Pizza Hut refer to ivu.org) claim they do not use rennet and ferment through vegetable rennet.
