There seems to be some disagreement on the foam that rises on the top (whether its good for you or not, etc) and it sounds a little messy too make. If David Frawley is saying the foam on top has some super value I'm going to have to follow that guidance. I'll try and contact him directly to get a litle more clarity, or maybe Guru Ravi knows exactly why. Indian grocery stores and even Whole Foods will have it on the shelf. Some will say salted and some will say unsalted, and some will even say sweet. Sweet just means unsalted as they do not add any sweetener. Use the unsalted. Guru Rattana shared with me the way she makes ghee. Get a crock pot..definitely seen at a lot of yard sales...fill it with butter N/S turn it on and in a few hours just pour off the clarified butter (ghee). Makes a lot very quickly and stores well.
