I ran out of mung beans

Hi,

 

I ran out of mung beans and used aduki and I got to thinking, why is it mung

beans? Why not any bean? Or what makes mung beans so special?

BLASPHEMY!!! (just kidding) no ...you are right...its just a traditional Indian

dish. Mung beans are the least nutritious of beans...if you use Basmati for rice

it all taste good, but forget it for nutrition. Aduki is far higher in Protein

and everything else. But aduki will change the taste considerably...

According to Ayurveda, mungs are the easiest bean to digest.

Sat Avtar Kaur - I wondered the same thing about mung beans, as I recently made lentils and rice and cooked it just like mung beans and rice, and it was fabulous. But I remember something in my first level teacher training about mung beans being specifically easiest for the body to digest. I have never had a problem with lentils or black beans, but other beans sometimes cause a lot of problems for me digestively - so maybe that's it. Mung beans are just easier to digest than most other beans. Anyone else out there know the "for sure" answer to this question?
