There is one recipe that I lost from a friend's copy and my library doesn't have it so I thought I'd check it's for African Potato Stew. Guest guest Posted October 21, 2009 Report Share Posted October 21, 2009 Kelly, I just happen to have that, so here you go. 2 T canola or corn oil 2 C chopped onion 1 garlic clove minced 1 T minced fresh ginger 2 t poppy seeds 1 t mustard seeds 1 T ground coriander 1/4 t ground cloves 2 russet potatoes, peeled and cut into 1/2 inch cubes 1 t salt 1/2 cauliflower head cut into bite size florets 1 sweet potato peeled and cut into 1/2 inch cubes 4 c thinly sliced collard greens 1/4 c raisins 1 T apple cider vinegar salt and pepper to taste Heat oil in large pot over med. heat. Add onion and garlic and cook 5 minutes stirring until onions soften. Add ginger, poppy and mustard seeds, coriander and cloves. Cook stirring for 2 minutes. Add russet potatoes and stir in 4 cups water. Increase heat to high and bring to a boil. Stir in the 1 tsp. salt and reduce heat to low. Simmer uncovered, stirring occasionally for 5 minutes. Stir in cauliflower, sweet potato, collards and raisins. Continue cooking for 10 minutes or until potatoes and sweet potatoes are tender. Season with vinegar, salt and pepper. Add more water if stew is too dry. Serve hot. You may add 1 cup cooked garbanzos along with the cauliflower f you like. Bon appetit!
