Cut the brinjals round in slices(thing ones),put oil in the pan,place slices on the pan,cook them upside down till the time you feel it is welldone.then sprinkle chilly poweder,salt and little amchoor/mango powder.Baba's kacharyas are ready. I got this recipe from a maharastrian friend of mine, so I guess it should be authentic. Kaacharya Brinjal - 1 (large purple one used for Baingan Ka Bharta) Masala Haldi Mirchi Dhaniya Jeera Garam Masala For Frying Rawa Slice the brinjal into round pieces. Apply salt and leave aside for sometime (so that the excess water in the brinjal drains away). Make a paste of the masala and coat the brinjal pieces and marinate for approx 30 mins. After that coat with Rawa and shallow fry as you would do to make aloo tikki. Hope this information suffices. Last Week, I cooked and Nivedhan " Brinjal Barith " to our beloved Babaji. I took Big Brinjal and massage with OIL and kept on the Gas Flame for boiled. After Baking I removed all the top skins and that Baked Baaji mixed with Curd and add salt, cardhamom, only one red chilli. Whether it is Correct? Or Some other recipe is there Please let me know? I am very thankful to them and will prepare and keep it for Naivedya of Babaji. Please. As far as my understanding goes, Khacharyas are circular pieces of bringal (eggplant) which you deep fry in oil and make them crispy and when you take them out you could sprinkle some salt, red pepper and amchur and some black pepper or you could put some chaat masala. I am sure Baba will accept it if you offer with love and cook it as per your understanding. I went to my best friend's house to play, and had these kachryas for the first time. and I loved them so much that I seriously requested her mom to teach them to my mom. I am not sure if I really remember this story or since I have heard it being narrated by others so many times, that I feel I remember it. Now, after so many years, I am lucky enough to have the same friend as my best friend. Her mom always kept a few aside just for me, till the day I was in India. and I know for the fact that, when I will go to visit, her mom will make those for me. Some things in life don't change. and they are called blessings. *Batatyachya Kachrya* (Serves 4 or if you know someone like me, then serves just 1:-) *Ingredients* 1 Idaho Potato 2-3 Tbsp Rice flour Salt to taste 1/2 tsp turmeric powder 1 tsp paprika 1/4 tsp asafoetida Oil to shallow fry *Method* 1. Scrub and wash the potato. Peel and dry with the paper towel completely. 2. Cut into thick circles. 3. Mix rice flour, salt, turmeric powder, paprika and hing and keep aside. 4. Heat a tawa/griddle and add around 1 tsp oil. 5. Dredge each potato ring in the rice flour mixture, making sure it's nicely coated from all the sides. 6. Add to the pan. and let them cook on low flame for about 10 minutes. 7. Flip them over and let them cook for another 5 minutes. 8. Serve as a delicious accompaniment with plain rice and daal.
