Guest guest Posted March 19, 2007 Report Share Posted March 19, 2007 Hi, Happy. My mother made wonderful vinegar and sauerkraut (big 20 gallon crocks of it for our family of 9) for at least 40 years. The correct bacterial culture produces vinegar and kraut which PREVENTS flies and eels. Their very presence indicates that this is not safe stuff for human consumption and needs to be thrown out and the crocks sterilized before trying a new batch. I would definitely " throw it out " ! This guy should trust his taste. It will not taste right and that should be a red flag to him--since eels and flies do not give him a clue. I would eat the eels and throw out the kraut. ) I challenge him to produce any scientific information to the contrary. Whoever he is, he should not be giving advice to others unless he is independently wealthy and can afford the many lawsuits that will result from his ignorance when people get sick!
