(reprint) The Japanese have carried out a series of animal feeding trials that showed that kefir and kefir grains can slow down or reverse the growth of a wide variety of cancers. These studies are obviously a first step to proving that kefir may be beneficial against cancer. However, in each study reported, the development and spread of the cancers given to the mice was reduced. Other researchers have started to try to identify what component of the kefir grains may be responsible for its cancer fighting properties. At this time it is not clear whether it is the kefir itself, the bacteria or yeast or something that the bacteria produce that is / are the active agents. It is clear that kefir has joined the list of food products that contain live bacteria that may have benefits that go beyond their basic nutritional value. Which is the same one I posted 3 or 4 times and you have reposted here. Dominic the owner recommends that you buy from GEM or get some from someone of the other members of his called " kefir making " . I am presently looking at a kefir " grain " which is what they call the biomass necessary to make " real " kefir. I have been making kefir with it right along and it contioniously is regenerating and growing larger. If you don't kill it in some way it will last indefinately and continually making more. This is NOT like what is available at the health food stores or through commercial sources like kefir making Kits like yougourmet and others. The kefir available in the stores is NOT real kefir. It is a man made combination of some yeasts and some bacterias but is not a natural symbiotic mass that will continue to live and replicate itself. Dominic's site is very comprehensive and wonderfully done.
