For breakfast I may have oatmeal with nonfat milk (because non fat milk is a carb, not a fat) and to sweeten, I use Stevia. If I have bread, it is whole grain an NO butter. So that is an all carb meal. If I wanted to, I could also have veggies with that. Or I might have an all fat/protien breakfast of 2 or three eggs scrambled cooked with butter, and lots of steamed veggies, and cheese. Potatoes, especially baked with butter/sour cream, chives and bacon bits was hard to give up, but my health is more important that a potato 4 times a week. For Lunch I usually have a large salad with lots of veggies (asperagas, and beets are my favorites) with some kind of meat, like chicken, salmon, tuna with a homemade dressing of sour cream, heavy cream, mayo and blue cheese. mmmmm very good. For dinner I have just a peice of meat and lots of steamed veggies. Sometimes I might have brown or wild rice with lots of veggies. In the mornings, 15 or 20 minutes before I eat breakfast, I will have a fruit smoothie and in afternoons I have a fruit snack. At night when I just really want a dessert, I whip up some cream with unsweetened chocolate and Stevia...its wicked but non of it is stored as fat because I am not eating ANY carbs with it. Hi JoAnn, Actually there are two bad fats / oils. 1) Any hydrogenated product and it's trans side products. 2) Veggie oils and their rich double bonds, which are highly involved with oxidized LDL, heart & blood vessel disease. So to get Optimal Health, eliminate (in order of badness) 1) Hydrogenated oils and fats 2) Poly rich veggie oils and any product made with it. 3) Mono rich veggie oils and any product made with it. Some extra virgin olive oil is ok as it still has natures Vit E content to protect it's double bonds but use VCNO to cook with or you will create trans fats in your cooked food.
