This is more likely to happen if you are using fresh herbs as the herb itself contains the moisture. It is also more likely to happen in the cold infusion method where the jar is placed in a sunny window, this will pull the moisture out of the remaining air inside the jar. The best way I have found to make infusions is with dried herbs in a crockpot set on low for 6-8 hours. Strain the herb out after it has cooked and your infusion is done. Pat. Guest guest Posted January 26, 2001 Report Share Posted January 26, 2001 Dear Pat, Try letting your fresh herbs to dry for a while (general 1 to 2 days) before you infuse them to get the water content down rather than infuse them infuse them in a crock pot with a heat that could kill the medicinal effects of the herb that you are cooking.
